SLIPPER LOBSTER PASTA (S$22++) comprises spaghetti, slipper lobster, kombu and English chives in spiced lobster oil.
As a result of the spiciness – and because slipper lobster is a shellfish – a medium-dry or medium-sweet white wine is the perfect pairing.
WEINGUT HULS MOSEL RIESLING 2020 (S$85++) shows lemon/green pineappley/Granny Smith appley fruitiness with a pinch of sweetness. Insatiably fruity, very fresh and vivacious, this German Riesling is delicious on its own and outstanding with Slipper Lobster Pasta.
An equally wonderful pairing is MARENCO STREV MOSCATO D’ASTI DOCG 2019 (S$65++). Fruitier and a touch sweeter than the Riesling, this Italian medium-sweet white has the perfume of honey and intensely ripe grapes. The fruitiness and sweetness are lifted by a spritz of carbonation produced naturally during the fermentation.
