The Tomahawk is delicious with Domaine La Grande Bellane Cotes du Rhone Villages Valreas 2020 (S$75++). Organically grown, the red Rhone shines with violets, deep dark cherry fruit and rich tannins. Intensely fruity and with round freshness, the winery advises to decant 60 to 90 minutes.
Another great pairing is Chateau La Tour de By 2016 (S$95 ++). The Bordeaux red shows cherry/ berry/curranty fruit balanced by crisp tannins, complete with a hint of tobacco. La Tour de By has origins going back to the 16th century. Decant 15 to 30 minutes.
