Seafood Risotto (S$18++) is a harvest of cuttlefish, squid, mussel, clams and prawns in a roasted tomato sauce. Like the ocean’s roaring waves, it shouts for a white wine. Woodlands Wilyabrup Margaret River Chardonnay 2018 (S$89++) was fermented entirely in French oak barrels employing natural, indigenous, wild yeast. Elegantly buttery in texture, it has flinty/vanilla/appley/lemony fruit buoyed by freshness and a long, lingering finish.
