Champagne Deutz is the house champagne of the Peninsula Hong Kong.
Dedicated to the founder of the house, Cuvée William Deutz is one of their top wines. It is made up of about two-thirds Pinot Noir, a third of Chardonnay, and a pinch of Pinot Meunier. 2006 is a very ripe vintage and being able to balance the exuberant fruit with freshness is the key. Winemaker Michel Davesne has calibrated the tightrope admirably. Bright pale gold. Ripe appley, Anjou pear, quince, and citrus peel. Complete with a spiced aspect that includes cloves. Gently creamy texture with a lift of freshness on the finish. About full-bodied.
