The Spinola Family has documented wine roots going back to 1729. It is unique in Jerez because Ximenez-Spinola only grows and produces wines entirely from Pedro Ximenez. There are just 16 hectares of vineyards. The family-owned company has “no interest in the production of large volumes but quality and loyalty of its follower … all our production is limited and numbered, making each bottle a unique piece while ensuring the quality and excellence of its content”. Most of its production is devoted to fortified sherries. Original, though, is a late-harvest white wine. Bright light gold. Delicately sweet. Raisin/honey/orange peel compote fruit with a hint of wood spice. Soft freshness on the finish. Fermented in old American oak barrels, the wine was left on lees for four months before bottling.
