A blend of Chardonnay and Pinot Noir, this sparkling rosé is closer to a light onion skin or copper shine than it is pink. Etoile refers to the star or principal dancer or prima donna of the Paris Opera Ballet. A sparkling wine that spent 36 months on lees in the bottle before being disgorged, and which is as good as a Champagne.
