Absolu is entirely chardonnay, parcels of fruit all from the Premier Cru village of Vertus in the Cote des Blancs. This blanc de blancs is absolutely delicious. There is so much concentration of fruit to withstand the non-dosage. A distinct aroma of honey, followed by sunny ripe fruit with a mineral aspect. On the palate, ripe lemony fruit with a bite of bitter-ish skin on the finish. Full-bodied but also very fresh. Absolu is aged a minimum 3 years on lees in bottle, and a further 4 to 6 months after disgorgement before the bottles are commercialised. Champagne Paul Goerg was founded in 1950 when 8 families decided to combine their vineyards: Collard, Faucheret, Ferat, Rogue, Gregoire, Doquet, Welsh, and Pougeoise.
