“The will of the estate is to produce a wine in harmony with the land. Wine is the memory of the grape, it is able to convey the taste of the earth”. A wonderful mission statement by the owning family which has roots to winegrowing since the 17th century. Certified organic since 2010 and then biodynamic from 2010, the estate is doing its utmost best to produce wine as part of the larger scheme of Mother Nature. Full of flavour but also very dry, the lemony/lime fruit is held by a core of packed acidity. More enjoyable as a pairing with food than as an aperitif because of the firmness of the finish.
