This was enjoyed last night By the Glass which was extracted via Coravin. The venue was Wine Universe, 769 Yuyuan Lu, Shanghai (Metro Station: Jiangsu Lu, Exit 4 on Line 2). Ruby/garnet. Fresh raspberries and strawberries on the nose. The palate follow-through reveals equally vibrant tannins from plant material including stems and, of course, skin. Wonderful balance. The grip of tannins and acidity on the finish augurs well for this “Old Vines/Vieilles Vignes” Burgundy. Will continue to evolve and become more complex. Between 3 and 5 years would be a good next window. Following that, 5 and 8 years. And beyond. An outstanding pairing with Xinjiang, Ningxia and Tandoori lamb. Cantonese Roast Goose and Chaozhou Lu Shui dishes.
