This is the sparkling wine Steven Spurrier and his wife, Bella, founded on her family farm in Dorset, about 180 km south-west of London. Planted to the three Champagne varieties, namely Chardonnay, Pinot Noir, and Pinot Meunier, the first harvest was 2011 and released in 2014. This pure Chardonnay, grown on south facing slopes and chalky soil, spent 24 months on lees before it was disgorged. It was served as an aperitif at Chateau Haut-Bailly on 26 June 2018 at the launch of Wine – A Way of Life, StevenSpurrier’s memoirs (see related video and review of the book on this same website). The elegant fruit – including citrus, appley, and minerally notes – is round and fresh and possesses good intensity and persistence. The wine shows evolution and has also benefitted from bottle age. Irresistible now and will continue to evolve.
