Born in Nagoya, Toshihiko Ito is wine consultant to restaurants, including
- 2-Star Michelin Japanese restaurant Oryori Fujii • Toyama
- 2-Star Michelin French restaurant Edition Koji Shimomura • Tokyo
- 1-Star Michelin Chinese restaurants Itsuka and Noyashichi • Tokyo
In addition to his prominent role as a wine consultant, Toshihiko Ito is deeply involved in wine education.
He is instructor at the Jiyugaoka Wine School, where he teaches the “Sommelier Training Course” and sharing his extensive knowledge and expertise with sommeliers.
Before becoming a wine consultant, Toshihiko Ito was Chief Sommelier at Kanda, a 3-Star Michelin Japanese restaurant in Tokyo.
From 2013 to 2014, he judged for the International Wine Challenge, one of the world’s most authoritative wine competitions.
