Fabien Duboueix has 20 years of F & B, and hospitality experience. He has worked in Germany, France, Ireland, England, Spain, USA and, since 2012, Singapore.
The Frenchman is a certified Sommelier (CMS), Specialist of Wine (CSW), Spirit Specialist, and Sake Sommelier. In 2014 Duboueix added another professional notch to his studded belt: Advanced Sommelier • Court of Master Sommelier.
Earlier this year – February 2021 – Fabien Duboueix joined Michelin 3 Star Les Amis as Chef Sommelier. Prior to that, he was also Chef Sommelier at NCO Club in charge of four outlets: Madame Fan (Chinese restaurant); Coolcats (music bar); Fishpool (Champagne bar); and, Stags’ Room (wine bar).
Before joining the JW Marriott (which NCO Club is part of), Fabien Duboueix was Head Sommelier for Michelin 3 Star Joel Robuchon le Restaurant and Michelin 2 Star L’Atelier at Resorts World Sentosa.
Fabien Duboueix was born in the Champagne commune of Chateau Thierry, birthplace also of French poet and writer Jean de La Fontaine. Duboueix is fluent also in English, Spanish and German.
