Cuvée Nicolas Francois 2006 is generous with ripe, rich, creamy textured nutty fruit
The 13th wine between the inaugural 1988 vintage and the current 2008, the rosé bubbly gets its colour by blending red and white wine before the secondary fermentation.
Comprising 55% Pinot Noir and 45% Chardonnay, less than 10% of the former had been vinified as a red wine. The entirety of the 55% black variety is from the single-vineyard Valofroy on the slopes of Premier Cru Mareuil-sur-Aÿ.
Best enjoyed in a broad, generous glass, Champagne Billecart-Salmon Cuvée Elisabeth Salmon 2008 is tensioned with zesty citrus/sour cherry fruit and a grip of friendly tannins on the finish. Aged about 10 years on lees in the bottle, the 2008 vintage also marks the first time the disgorgement date is featured on the back label.
