My Favourite Collin’s Pairing

This column resumes now that Singapore allows dining in a restaurant again, albeit a maximum 2 to a table.

Duck Confit is the favourite duck dish of France.

Of the 8 reds I selected for COLLIN’S, two favourite pairings are Mount Difficulty Roaring Meg Central Otao Pinot Noir 2019 and a Spanish red.

The Garnacha aka Grenache for El Hombre Bala Negre 2017 comes from high altitude vineyards about 80 km south-west of Madrid.

The vines are between 50 and 90 years!

Ruby in shade and shine. Dried rose petals, strawberries, and berries. Pristine fruit on silky tannins.
