Vincent Caille is the 5th generation proprietor/viticulturist/winemaker of Domaine Le Fay d’Homme
Domaine Fay d’Homme is mentioned in the highest regard and in the very same breath as 5th generation proprietor/viticulturist/winemaker Vincent Caille.
This star of Muscadet has progressed from sustainable to organic to biodynamic winegrowing.
As a result, wild tulips which had disappeared have now reappeared and are thriving in his vineyards. In the winery, Vincent Caille ferments his wines only with natural, indigenous, wild yeast.
The soils of the biodynamic vineyard include siliceous clay, stones, gneiss, gabbro and orthogneiss.
Domaine Le Fay d’Homme is near Monnieres in the heart of the Muscadet Sevre et Maine appellation.

Being biodynamic alone does not guarantee something special if the pure, pristine fruit of the vineyard is mishandled or compromised in the winemaking.
Except, of course, this will not happen because Vincent Caille is a high priest of Muscadet. And won the attention and admiration of some of the world’s top writers including Jancis Robinson MW. Writing on her website on 30 June 2017 of another one of his Muscadets, the Financial Times columnist raved:
“If I had had my MW candidate skills honed I might have worked out it was a mature Muscadet but as it was I was simply blown away by its beautiful texture, fresh pungency, obviously low acidity, relatively low alcohol (12%) but great saline purity and complexity”

The Muscadet from this walled vineyard or clos sees no oak whatsoever but is aged in a concrete amphora. As a result, the wine and the lees are constantly in natural motion inside the egg-shaped amphora. The soil includes siliceous clay and stones with a subsoil of orthogneiss. The ripe quince/citrus/mandarin peel fruit is full of energy, complex, and possesses a creamy texture. Dry, fresh, and with a long, persistent finish.
