My Favourite Collin’s Pairings

BLACK MUSSELS CASSEROLE (S$17++) is in a Vegetable Ragout served with Homemade Garlic Bread.

Chardonnay is a delicious pairing with the shellfish and vegetable as the sauce is creamy.

We have two versions of this white wine.

DOMAINE MAURICE TREMBLAY CHABLIS 2020 (S$85 ++) is unoaked. The white Burgundy is loaded with ripe citrus, pineappley, appley, minerally fruit. The freshness of the acidity will cut through the sauce.

WOODLANDS WILYABRUP MARGARET RIVER CHARDONNAY 2019 (S$95 ++)  is fermented entirely in French oak barrels using wild yeast. This elegant Chardonnay shows flint, vanilla, peach, lemon and melon fruit.
