Fabien Duboueix – based in Singapore since 2012 – has worked in Ireland, England, Spain, Germany, USA and France.

Frenchman Fabien Duboueix has worked in Ireland, England, Spain, Germany, USA (Maine, South Carolina and California) and France. He has been based in Singapore since 2012.

Duboueix was for five years Head Sommelier of Michelin 3 star Joël Robuchon le Restaurant in Resorts World Sentosa. The wine list at the restaurant – since closed – was valued about S$2 million with the priciest being DRC Romanee-Conti 1990 at S$90,000. It sold one night and – together with three other bottles – the bill for wine was S$180,000.

Fabien Duboueix is presently Head Sommelier of the NCO Club and the J W Marriott South Bank. He joined in January 2018 as part of the pre-opening team of the NCO Club, a side project of the hotel where he is responsible for the wine lists of the four outlets in the Singapore National Heritage building: Fishpool (a Champagne bar), Stag’s Room (a wine bar), Coolcat (a musc bar) and Madame Fan (a Chinese restaurant).

Together with the list at J W Marriott South Beach, that’s about 800 labels.
